And now onto lemons.
If you read my Real World Real Food Challenge post, you know I suddenly have an abundance of organic lemons at my house. Sonja let the world know the recipe for Chuckie Tea which I'll be trying tomorrow, BUT I found a sweet way to use up 3 of my 10 lemons yesterday.
Raw Lemon Treats
adapted from Heather Eats Almond Butter
1 cup raw almonds
1 cup sesame seeds
1 cup pitted dates
1/2 cup fresh squeezed lemon juice
2 tsp. lemon zest
Put all the ingredients except coconut in a food processor and run until it all comes together. Roll into tablespoon size balls with damp hands, and then roll in the coconut flakes. I made 19 balls with this recipe.
If you like lemony, you will love these. They are gluten-free, grain-free, and have no added sugar. Don't go crazy though, because each ball has around 100 calories, so that could add up pretty quick. Even picky eaters will approve...
